Description
潮汕牛肉丸已有近百年的歷史,成為潮汕特色美食美名遠揚,也是廣東有名的小食。講究手工製作,口感爽脆。可分為牛肉丸和牛筋丸兩種,牛肉丸採用純鮮肉打製,肉質細嫩,口感鬆脆。牛筋丸是在牛肉裡加進嫩筋,使之味道更香,彈性更強,提升嚼勁。

傳統制法是選用新鮮的牛腿包肉作料,去筋後切成塊,放在大砧板上,用特製的方形錘刀兩把,上下不停地用力把牛腿肉槌成肉醬,加入少量澱粉、幼鹽、上等魚露等,繼續再槌15分鐘,隨後用大缽盛裝,加入方魚末、白肉粒,拌勻,用手使勁攪撻,至肉漿粘手不掉下為止,然後用手抓肉漿,握緊拳擠成丸,用羹匙掏進溫水盆裡,再用慢火煮丸約8分鐘,撈起牛肉丸。

食時用原湯和牛肉丸下鍋煮至初沸,加入適量芝麻油、胡椒粉和芹菜粒,配上沙茶醬或辣椒醬佐食。
牛肉丸還可燒烤食,燒烤時把牛肉丸剖成兩半,抹上醬料和蜜糖烤熟即可開吃。
